Ingredients

1/2 C. butter

1/2 C. shortening

1 C. peanut butter

1 C. white sugar

1 C. brown sugar

2 eggs

1 tsp. vanilla extract

1/2 tsp. almond extract

2 1/2 C. flour

1 1/2 tsp. baking soda

1/2 tsp. salt

Preparation

Preheat oven to 375 degrees. Grease two cookie sheets In a large bowl, cream together the softened butter, shortening, peanut butter, white and brown sugar and beat until smooth. Beat in the eggs one at a time, then stir in the vanilla and almond extracts. Combine the flour, baking soda, and salt; stir into the peanut butter mixture. Roll dough into 1 inch balls and place them 2 inches apart on greased cookie sheets. Use a wet fork dipped in white sugar to make crisscrosses on the top. Bake for 8 to 10 min in preheated oven. Allow cookies to cool 5 min before removing to a wire rack to cool completely.
