Ingredients
1 1/2 c mashed bananas
1/3 c peanut butter
1/2 c granulated sugar
1 1/2 c flour
1/2 t salt
1/4 t nutmeg
6oz banana yogurt
2 large egg whites
1/2 c brown sugar, packed
3/4 t baking soda
3/4 t cinnamon
Preparation
Preheat oven to 350. In a large bowl, combine bananas, yogurt, peanut butter, and egg whites with a mixer at medium speed. Add sugar and brown sugar and mix well. In a separate bowl, combine remaining ingredients. Add flour mixture to banana mixture and mix until well blended. Pour batter into a 9x5 loaf pan coated with cooking spray. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
