Ingredients

1/2 cup cold water

1 cup of boiling water

2 packages of unflavored gelatin

1/2 cup of sugar (or comprable portion of Splenda to cut calories more!)

1 cup of chopped peaches (cooked) and 1/2 cup of fresh peaches in season

1/3 cup of freshly squeezed lemon juice

2 egg whites (beaten)

1/4 cup of sugar (or Splenda equilvalent)

Garnish as desired (I like a few blueberries or raspberries or a little lemon peel thinly garnished on top!)

Preparation

Take cold water, sprinkle in the gelatin then dissolve with the boiling water addition. Slip in the cooked peaches and lemon juice and mix all. Take the egg whites and beat until just foamy and add the 1/4 cup of sugar (or Splenda) and continue beating this until the egg white mixture forms peaks. To this, add the previously mixed gelatin mix. Chill for about 2 hours in a large bowl so that the dessert is set, then break up slightly and dish out into individual dessert serving dishes (green glass dishes provide a very pretty contrast to the dessert). Use the 1/2 cup of fresh peaches to add pretty slices of peach to each dessert serving dish. Garnish with the desired topping (roll fresh or frozen blueberries or raspberries in Splenda placed in a saucer to coat the fresh garnish fruit with just a touch of shine and dew drop look).
