Ingredients

6 peaches

1 loaf herb slab bread

1 1/2 shallots

1 bag arugula

olive oil

white balsamic vinegar

tarragon

Preparation

cut and pit peaches, salt and pepper them, grill on high each side for two minutes. cut bread into cubes toast for 5 minutes on 500. dice peaches in large bowl. thinly slice shallots. add shallots to the peaches. chop tarragon and add to shallots and peaches. toss arugula with olive oil and add 2 teaspoons balsamic vinegar. toss together and serve
