Ingredients

6-8 Peaches, peeled, pitted and cut into 1/2 inch slices (2 cups)

1/3 Cup light brown sugar

1 1/2 TBSP Cornstarch

1 1/2 TBSP fresh lemon juice

1/2 tsp ground cinnamon

Topping:

1 3/4 cups of unbleached flour

1/2 Cup sugar

2 tsp baking powder

1/2 tsp salt

8 tbsp cold unsalted butter cut into tablespoon size

3/4 Cup whole milk

1 1/2 tsp vanilla extract

2 tablespoons sugar mixed with 1/4 tsp ground cinnamon

Preparation

Preheat oven to 375 Put the peaches in heavy saucepan. Add the brown sugar, cornstarch, lemon juice cinnamon. Heat and stir until the mixture thickens about 5 minutes. Pour into pie plat or baking dish that holds 2 1/2 Quarts

While the fruit cooks mix flour sugar baking powder and salt in large bowl. Pour in the milk and vanilla and stir until dough forms. Put the dough onto the hot fruit mixture in small separate mounds and sprinkle with cinnamon sugar. Place the baking dish on a cookie sheet and bake for approx 30 min until top is golden. Serve warm
