Ingredients
Fruit Filling:
1.5 pounds frozen peaches
1/4 cup brown sugar
1 tablespoon fresh lemon juice
2 tbsp cornstarch
Biscuit Topping
1.5 cup all-purpose flour
3/4 cup sugar
1.5 teaspoon baking powder
3/4 teaspoon salt
1 stick cold unsalted butter, cut into small pieces
1/4 cup hot water
Preparation
- Preheat oven to 425 deg F.
- Combine fruit filling ingredients in a casserole dish.
- Bake fruit filling for 15 minutes. Remove from oven and stir. Bake for another 15 minutes.
- Meanwhile, combine all the dry biscuit topping ingredients in a food processor and pulse to mix it.
- Add the butter. Pulse until it forms coarse crumbs.
- Heat 1/4 cup water in microwave and add to the food processor. Pulse until just combined.
- Remove fruit filling from oven. Put small spoonfuls of biscuit topping over the fruit. Do not spread it - the topping will spread as it bakes.
- Bake for 25 minutes or until the topping is golden brown and cooked through.
- Let the cobbler sit for a few minutes before serving, or serve at room temp.
