Ingredients
Crust
7 whole low fat graham crakers, broken into pieces
1/4 cup granulated sugar
6 tbsp. unsalted butter, diced
Filling
3 7.5 ounce pkgs farmers cheese
1 cup granulated sugar
3 tbsp. all purpose flour
3 large eggs
1/2 tsp. organic vanilla extract
3 large peaches, peeled, pitted, diced
Preparation
For crust: Preheat oven to 350 degrees, Blend graham cracker pieces, sugar and butter in food processor or blender until it forms most clumps. Press into the bottom of a 9" round greased baking pan. Bake until golden brown, about 12 minutes. Transfer to rack to cool. Maintain oven temperature.
For Filling: Using an electric mixer, beat farmers cheese, sugar and flour in large bowl until blended. Beat in eggs, one at a time, add vanilla extract. Puree diced peaches in food processor or blender until smooth. Beat peach puree into batter. Pour filling over crust. Bake until edges are raised and golden brown and center is dry and softly set. Place hot cheesecake in refrigerator uncovered overnight.
Remove from refrigerator and decorate with sliced peaches. Drizzle with honey.
