Ingredients
3 cups peeled and sliced peaches
1 cup blueberries
1 tbsp cornstarch
1 tsp lemon juice
1 tsp vanilla extract
1 splash of whiskey
1 tsp cinnamon
1/2 cup light brown sugar
1/8 cup unsalted butter
1/2 cup milk
1/2 tsp salt
1/2 tsp nutmeg
1 tbsp cane sugar
1 1/2 tsp baking powder
Preparation
Heat oven to 400.
Mix 1/2 sugar and cornstarch in saucepan. Add lemon juice, vanilla extract and whiskey and mix. Add peaches, blueberries and cinnamon. Stir gently until a boil occurs and mixture thickens. Remove from heat after 1 minute and pour into a casserole dish. Place dish in oven while making topping.
Mix remaining dry ingredients (salt, nutmeg, cane sugar, baking powder) in a bowl. Add milk and mix until you get a thick dough. Cut butter into 6 pieced and cut through dough gently. Do not cut until butter has disappeared, you want to have little pieces there.
Scoop dough into 6 balls on top of fruit mixture. Bake for 25-30 minutes or until dough is golden brown.
Enjoy!
