Ingredients

Vanilla Wafers

1 pint vanilla ice cream (softened)

1 can pure pumpkin

1 3/4 c granulated sugar

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground cloves

1 tsp vanilla

1 1/2 c heavy cream

1 c slivered almonds

Preparation

Line pie pan with wafers. Spread soft ice cream over wafers, cover pan and freeze until firm. Mix pumpkin, sugar, spices and vanilla. Whip 1 c of cream with a hand mixer until stiff. Fold whipped cream into pumpkin mixture. Remove pan from freezer and pour pumpkin mixture over ice cream. Replace cover and freeze.

Combine slivered almonds with 1/4 c sugar in small skillet over low heat. Stir quickly. When sugar melts and almonds begin to caramelize, remove from heat and cool on sheet of wax paper. Break up almonds and sprinkle over pie before serving.
