Ingredients

4 large potatoes, peeled and chopped in large pieces

1 small cauliflower, chopped in large pieces

6 oz frozen peas

1/2 Large Eggplant, peeled

2-3 med-large white onions, chopped finely

8-10 roma tomatoes, chopped finely

10-12 garlic cloves, chopped finely

1 green pepper, chopped finely

1 red pepper, chopped finely

5-6 tsp Pav Bhaji Masala

1 tsp Red Cayenne Pepper powder

Salt to taste

1 tomato sauce can

1 tbls of unsalted butter

1 red onion, chopped finely

1 bunch cilantro, chopped finely

Preparation

  1. Put all veggies in pressure cooker and add 1 cup water. 4 whistles to complete.

  2. Mash all veggies in cooker.

  3. Saute onions for a few mins, then add garlic, bell peppers, and tomatoes. Cook for 2-3 mins

  4. Mix the veggies that are in the pressure cooker into onion mixture. Cook for 2-3 mins

  5. Add Pav Bhaji Masala, Red Mirchi, and Salt. Mix and cook well for 10 mins

  6. Add 1 can of tomato sauce. Add more to taste if needed. Add butter and cook for an additional 2-3 mins.

  7. Garnish with cilantro and red onions
