Ingredients

16oz jar Pickled Jalapenos (divided)

16oz Sharp Cheddar Cheese Shredded

16oz Jack Cheese Shredded

16oz can Evaporated Milk

4 Extra Large Eggs

1/4 cup flour

1/2 tsp salt

1 can tomato paste

Preparation

Preheat Oven 325 degrees

Cover 9*13 pan with non-stick spray. Spread 1/2 of Jalapenos evenly over bottom of pan. Cover with Cheddar Cheese. Spread remaining Jalapenos on top of Cheddar. Cover with Jack Cheese. Emulsify Flour and Salt with some Evaporated Milk. Beat eggs then combine with flour mixture and remaining milk. Pour liquid evenly over casserole. Bake for 30-35 minutes. Remove Casserole and cover with tomato paste. Bake for another 10 minutes. Casserole should be firm. Let cool and cut into bite size squares.
