Ingredients

2 1/2 cups all-purpose flour 

1 teaspoon salt 

1 teaspoon sugar 

1 cup (2 sticks) cold unsalted butter, cut into small pieces 

1/4 to 1/2 cup ice water 

Preparation

Pulse flour, salt, and sugar in a food processor to combine. Add butter, and process until mixture resembles coarse meal, 8 to 10 seconds. To make by hand, whisk flour, salt, and sugar in a large bowl; using a pastry blender, cut in butter until mixture resembles coarse meal.

With machine running, add ice water through the feed tube in a slow, steady stream just until dough holds together, no longer than 30 seconds. To make by hand, add water, stirring with a wooden spoon until dough comes together.

Turn out dough onto a piece of plastic wrap. Shape into a disk; wrap in plastic. Refrigerate at least 1 hour, or up to 2 days.
