Ingredients
1 cup of Hatch chili peppers roasted, peeled deveined and chopped
2 cups vegetable stock
1/2 onion chopped
2 teaspoons Mexican oregano
6 cloves garlic, minced
1 can hominy, drained and rinsed
1 tablespoon chili powder
1 tablespoon cumin
1/2 tablespoon red pepper flakes
Salt to taste
chopped fresh veggies (your preference)- squash, mushrooms, zucchini, etc.
Corn tortillas
Avocado
Limes
Preparation
Combine ingredients 1 through 5 in a cooker and simmer together while preparing other ingredients. Add ingredients 6 through 11 and simmer on low until all veggies are tender. Serve with corn tortillas, fresh lime wedges and a slice or two of avocado for each bowl.
