Ingredients
2 cups cornmeal
1 cup all purpose flour
3/4 cup whole wheat flour
1/3 cup soy flour
8 tsp baking powder
1/2 tsp salt
2 eggs
1/2 cup oil
1/2 cup honey
1 cup milk
1 cup water
Preparation
Preheat the oven to 375 degrees F. Butter and flour a 13" x 7" cake pan.
Measure the dry ingredients into a large bowl. Mix well.
Beat the eggs in a medium bowl. Add the honey and beat well. Add the oil, milk, and water, and mix well.
Add the wet ingredients to the dry ingredients, and mix just until lumps are dissolved. Pour the batter into the pan.
Bake for 25 to 30 minutes, until a toothpick comes out clean.
