Ingredients
1 cup quick grits
3 cups water
1/2 cup ground oats
1 Tablespoon butter
5 green onions, chopped
1/2 cup pureed butternut squash or pumpkin
8 oz. cheese, sliced or shredded, preferably cheddar
4 eggs
1 lb. bacon
Salt and pepper to taste
Can be served with avocado slices for lunch or dinner
Preparation
Boil water, add grits and stir. Add oats, butter, and onions and stir and allow to cook until just thickening. Add squash (if frozen, cook and stir until melted) and cheese. Stir until well heated, then add eggs and cook until just thickening and beginning to bubble. Stir in bacon and serve. Top with avocado if desired.
