Ingredients
1 box (500g) farfalle pasta
1 Knorr beef bouillon cube
2 cups + 1/2 cup water
2- 3 ounce packages of julienne cut sun dried tomatoes
1/4 cup olive oil
1 small sweet onion chopped
2 cloves garlic chopped
1/2 teaspoon salt
1/2 teaspoon cracked pepper
1 cup fresh basil leaves - cut into julienne strips
Garnish - Pine nuts and parmesan cheese
Preparation
Prepare pasta according to package directions. In a sauce pan, place bouillon cube and two cups of water bring to boil and reduce to medium heat until cube disolves. Add sun dried tomatoes and simmer for 5-7 minutes. In medium stock pot, add olive oil and brown onions and garlic until tender. Add cooked pasta, and tomato mixture and additional 1/2 cup water. Add salt, pepper and basil. Simmer for 10 minutes over medium low heat. Garish with pine nuts and parmesan cheese.
