Ingredients

1/2 cup unsalted butter

4 T chopped prosciutto

2 red bell peppers chopped

salt and pepper to taste

2 cups whipping cream

1 lb fettucine

1 cup grated parmesan

Preparation

  1. Melt butter in a medium to large skillet. Add the prosciutto and saute briefly. Add the bell pepper and cook 5 minutes more or until pepper is wilted.
  2. Stir in the cream, salt and pepper to taste. Let mixture come to a boil. Simmer 2 to 3 minutes or until thickened slightly. Cool. Pour mixture into blender and blend until smooth.
  3. Meanwhile, bring a large pot of water to a boil -add a couple drops of olive oil. Cook the pasta until tender. Drain well and add to cream sauce along with cheese. Toss and cook pasta until well coated and hot through. Serve immediately. Serves 8
