Ingredients
12 oz. box of short pasta (penne, etc)
1/4 cup (a little less) olive oil
2 red bell peppers, thinly sliced
2 cloves garlic, chopped
12 oz. mozzarella, cut into bite size pieces
Kosher salt and pepper
Preparation
- Cook the pasta according to package directions, drain and set aside. Wipe out the pot to reuse.
- Heat the oil in the pasta pot over medium heat. Add bell peppers and garlic and cook, stirring occasionally, until peppers are tender (and turn slightly orange) (approx. 5-7 minutes). Add pasta, 1.5 tsp. salt and 1/4 tsp. pepper. Mix together and add in cheese. Serve.
