Ingredients

12 oz. box of short pasta (penne, etc)

1/4 cup (a little less) olive oil

2 red bell peppers, thinly sliced

2 cloves garlic, chopped

12 oz. mozzarella, cut into bite size pieces

Kosher salt and pepper

Preparation

  1. Cook the pasta according to package directions, drain and set aside. Wipe out the pot to reuse.
  2. Heat the oil in the pasta pot over medium heat. Add bell peppers and garlic and cook, stirring occasionally, until peppers are tender (and turn slightly orange) (approx. 5-7 minutes). Add pasta, 1.5 tsp. salt and 1/4 tsp. pepper. Mix together and add in cheese. Serve.
