Ingredients
1 cup Breadcrumbs
6 Tablespoons EVOO
12 Oz. Linguine
4 Garlic Cloves thinly sliced
3 Tablespoons Fresh lemon juice
1/4 teaspoon dried crushed red pepper
1 6 oz. bag baby spinach leaves
Grated Parmesan cheese
Preparation
Cook pasta in boiling salted water… drain and reserve 1/2 cup liquid
In small saucepan, heat the olive oil, garlic, lemon juice and red pepper over medium heat. Cook about 5 mins until garlic turns golden.
Toss pasta, oil mixture, and spinach in a large bowl until the spinach wilts. Add the reserved cooking liquid as needed to moisten. SPrinkle breadcrumbs over and and serve sprinkling each plate with the cheese.
