Ingredients
8 oz dry pasta cooked according to package
1 teaspoon olive oil
2 medium zucchini shredded
1/4 cup soft goat cheese
3 ripe plum tomato diced
1/4 cup chicken broth
1/4 tsp red pepper flakes
salt and pepper to taste
Preparation
saute over medium heat shredded zucchini in olive oil for 5 minutes, adding 1/2 of the chicken broth with red pepper flakes
reduce heat and add goat cheese, stirring until melted (adding remaining chicken broth if needed)
add salt and pepper to taste
toss tomato with cooked pasta
top with goat cheese zucchini mixture
serve and enjoy!
