Ingredients

1 small Onion, chopped

2 cloves Garlic, minced

2 cups Spinach, chopped

1/4 cup Parsley, chopped

1 tbsp Olive oil

1 tsp Fresh rosemary, chopped

1/2 tsp Dried oregano

1/2 tsp Salt

1/2 tsp Black pepper

1/4 cup Dry white wine

2 cups Penne or bow-tie pasta

1/2 cup Crumbled blue cheese

Preparation

  • In large skillet, saute onion, garlic, spinach and parsley in oil

  • Add rosemary, oregano, salt, pepper and white wine, simmer 2-3 minutes

  • Cook pasta, drain and return to pot

  • Stir blue cheese into the sauce and gently heat through

  • Toss the pasta with sauce and serve immediately
