Ingredients
2 slices cooked pork loin roast
1/2 lb pasta of your choice
1/2 T butter
1 T thinly sliced fresh sage
1/2 c whole milk
1/4 lb slicing blue cheese, cut in pieces
black pepper and nutmeg to taste
3 T crumbled, cooked bacon
1/4 small onion, caramelized
1 oz parmesan cheese
Preparation
Cook pasta according to directions. Warm pork and chop in small pieces. Melt butter over medium heat till foam dies off. Cook sage, stirring, 1 minute. Add mild and blue cheese, and cook till sauce is smooth. Reduce heat to low and season to taste with freshly ground black pepper and nutmeg. Drain pasta, and toss in pan with sauce. Mix in pork, plate, and top with bacon and caramelized onions.
