Ingredients
1 box Pastina (Acini di Pepe) pasta
1 cup sweet corn
1 pint yellow cherry tomatoes
1 pint red cherry tomatoes
1 TBS minced garlic
1 cup red onion, finely chopped
4 oz olive oil
1 cup chopped basil leaves
1 oz fresh lemon juice
1 cup parmesan
salt and pepper to taste
Preparation
Cook pasta and drain. Rinse with cold water. Combine olive oil and basil in small bowl. In large bowl, allow garlic and onion to soften in lemon juice for one minute. Add tomatoes, blended olive oil, corn, salt and pepper to taste. Add pasta and fold in parmesan. Garnish with basil leaves and serve cold.
