Ingredients
1 pound farfalle (bowtie)pasta or cheese tortellini
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, minced
1 pound jumbo shrimp, peeled, deveined and cut into 1/2" pieces
1/4 cup sun-dried tomatoes, julienned
1 cup half and half
1/4 cup vodka
1/4 cup fresh basil, julienned
1/2 cup Asiago Cheese, shredded
salt and pepper, to taste
Preparation
1.Cook pasta according to package directions.
2.While pasta cooks, in a large saute’ pan heat oil and butter. Add garlic and cook just until softened.
3.Add the tomatoes and cook briefly.
4.Add the shrimp and saute’ until pink.
5.Add the vodka and salt and pepper. Cook just to heat.
6.When the pasta is drained, return it to the large pot it was cooked in and add the shrimp mixture. Place over a low heat and add the half and half. Slowly mix in the Asiago and cook just until melted. Remove from heat, add the basil and cover.Let stand about 5 minutes before serving.
