Ingredients
4 cups chopped/seeded tomatoes
8 Basil leaves
2 Garlic cloves minced
1 Tbsp olive oil
1 lb bowtie pasta
1/2 lb fresh mozzarella cheese cut into small cubes
grated parmesan cheese
Preparation
- Cook the pasta in salted water
- Set aside one cup of chopped tomatoes and two of the basil leaves cut into strips. In a blender puree the remaining tomatoes and basil with the garlic and olive oil.Add salt and pepper to taste.
- Drain the pasta and and toss it immediately with the mozzarella cubes. Add the sauce and mix well.
- Top with the remaining tomatoes, basil and grated cheese.
