Ingredients

4 cups chopped/seeded tomatoes

8 Basil leaves

2 Garlic cloves minced

1 Tbsp olive oil

1 lb bowtie pasta

1/2 lb fresh mozzarella cheese cut into small cubes

grated parmesan cheese

Preparation

  1. Cook the pasta in salted water
  2. Set aside one cup of chopped tomatoes and two of the basil leaves cut into strips. In a blender puree the remaining tomatoes and basil with the garlic and olive oil.Add salt and pepper to taste.
  3. Drain the pasta and and toss it immediately with the mozzarella cubes. Add the sauce and mix well.
  4. Top with the remaining tomatoes, basil and grated cheese.
