Ingredients

1/2 lb. long pasta, such as Linguine

1 large clove very fresh garlic, chopped

1/2 teaspoon dried red pepper

1/4 cup olive oil

1/3 cup crumbled blue cheese (Danish Blue is perfect)

1/3 cup chopped parsley

Preparation

  1. While your choice of long pasta is cooking, heat loive oil in small saute pan.

  2. When oil is hot, add red pepper flakes.

  3. After about 15 seconds, add garlic and saute just until garlic turns slightly golden.

  4. Remove oil from heat.

  5. Drain pasta into large, pre-warmed tossing bowl. Pour oil mixture over pasta and toss.

  6. Add parsley and blue cheese to pasta and toss thoroughly.

Serve immediately with a robust red wine.
