Ingredients

2 Celery stalks chopped

1 bell pepper chopped

1 onion chopped

3 cloves garlic minced

Fresh spinach

2t parsley

32 oz chicken stock

1 can stewed tomatoes

1/2c cooked small pasta

1 can cannelloni beans

Red pepper flakes

Italian seasonings

Salt and Pepper

Preparation

  1. Sauté raw veggies and seasonings
  2. Stir in chicken broth, tomatoes and their sauce, simmer 20 min
  3. Separately: cook pasta and drain. Add undrained beans and mix until warmed through
  4. Serve soup and pasta together, but keep in separate containers (pasta and beans will take on too much flavor and get soggy if combined).
