Ingredients
2 Celery stalks chopped
1 bell pepper chopped
1 onion chopped
3 cloves garlic minced
Fresh spinach
2t parsley
32 oz chicken stock
1 can stewed tomatoes
1/2c cooked small pasta
1 can cannelloni beans
Red pepper flakes
Italian seasonings
Salt and Pepper
Preparation
- Sauté raw veggies and seasonings
- Stir in chicken broth, tomatoes and their sauce, simmer 20 min
- Separately: cook pasta and drain. Add undrained beans and mix until warmed through
- Serve soup and pasta together, but keep in separate containers (pasta and beans will take on too much flavor and get soggy if combined).
