Ingredients
One-half package whole wheat penne
Sausage - Italian or other - maybe 1/4 to 1/2 lb. as desired
One jar vodka-based pasta sauce (you may not need all)
1 cup frozen peas
1/4 cup pitted Greek olives
1/4 cup feta cheese
1 cup garlic toasted bread crumbs (see above)
1/2 cup grated Parmesan cheese
Preparation
Cook penne according to package directions. Drain and turn into casserole dish. Slice or chunk up sausage and saute over medium heat until brown. Add to penne and stir in sauce, peas, olives and feta. Add bread crumbs, tossing lightly to combine. Top with Parmesan. Bake in 350 degree oven for about 30 minutes, until cheese is melted and mixture is bubbly.
