Ingredients
12 oz Pasta ( I like penne)
1 red bell pepper
grape seed oil
1/4 vegetable broth
4 oz feta cheese + some for garnish
salt and pepper to taste
1 t. dry dillweed
Preparation
- Saute grapeseed oil and pepper over med. heat until pepper is soft.
- Cook pasta according to directions
- To peppers and broth, feta and dill. Cook until cheese melts. Add salt and pepper to taste.
- Toss peppers and sauce with pasta. Garnish with a small amount of feta.
