Ingredients
3 1-lb packages of sausage
3 large yellow onions
1/4 cup freshed chopped oregano
3-5 garlic cloves
2 lbs uncooked pasta
1/3 cup mayonnaise/mustard mix
Grated cheese to taste
Preparation
Take 3 different 1-lb packages of Trader Joes pre-cooked gourmet chicken sausage and grill to brown, basting with olive oil. While grilling, in a separate deep frying pan, saute until clear three large diced onions, adding 1/4 cup fresh chopped oregano and several chopped garlic cloves. Put 6 quarts of water on to boil. When the sausage have browned, slice into disks about 3/8-inch in width and saute in a skillet. (Keep an eye on those onions.) When the water boils, add 2-lbs pasta - my preference is bowtie/farfalla. Cook according to package instructions. When “al dente”, drain and rinse briefly in cold water to stop cooking. Into a large container, mix pasta, mustard/mayonnaise, onions and sausages.
Serve with grated parmesan cheese.
