Ingredients

2carrots, 2 stalks celery,2onions,salt,pepper

fresh garlic to taste, oil

or vegetable oil, 1 large tin

of whole or diced italian tomatoes,rigatoni or pasta of

choice, parmesean cheese,

optional italian sausages, mild or hot

Preparation

boil pasta (rigatoni) in advance, dice in processor 2 carrots, 2 stalks of celery, 2 onions, saute in pan with oil. Add tin of wholeor diced italian tomatoes,salt,pepper, saute 20 minutes. In separate frying pan, remove skin from fresh italian sausages, cut into 5 pieces and roll into round balls, brown on all sides, add to tomato sauce. this can be made in advance and warmed up to serve, quick, easy and satisfying for everyone
