Ingredients

3 tbsp. olive oil

2 chopped green peppers

2 large onions, chopped

5 c. chopped carrots

3 tbsp. chopped fresh parsley

2 (10 oz.) boxes chopped spinach, frozen (drain thoroughly)

6 eggs, beaten

3 tsp. salt

1 tsp. pepper

1 1/2 c. matzo meal

Preparation

Saute green peppers, onions, parsley and carrots in oil for 5 min. Cook spinach; drain. Combine all vegetables.

Add eggs, salt, pepper and matzo meal.

Place into a 9x13 pan; sprinkle with paprika. A drizzle of oil over top.

Bake 350 for 40 min. Can be made in advance and frozen.
