Ingredients

1 box Matzoh Farfel

12 whole EGGS

(can substitute 6 of the eggs with 6 egg whites or equivalent of egg substitute)

2 Tbs veg OIL

Salt & Pepper to taste

Preparation

Preheat oven to 350 Pour farfel into large bowl Add water to cover and let sit for 10 min so that farfel absorbs water Drain very well, squeezing out all excess water Mix in eggs, oil, salt & pepper

Grease muffin tin(s) using butter, marjorine, or spray butter Fill each muffin receptacle 3/4 full

Bake for 45 min or until golden brown Remove from tin immediately (should pop right out) into cool bowl or basket If making ahead of time: reheat on low til warm before serving

Can be made a day ahead. Keep in open bowl. Do not cover with plastic wrap or enclose in plastic bag.
