Ingredients

¼ cup potato starch

1 cup sugar

1 cup boiling water

1 lemon (juice and rind)

3 egg yolks well beaten

1 teaspoon butter

Preparation

add starch to 1 cup sugar and mix well. Add boiling water and yolk, stirring until thick and clear. Add juice and rind of lemon and stir until it thickens again. Add a little of the hot mixture to the egg yolks. Then add the yolks back to the hot mixture. Add the butter and stir well. Cover and cool before using. Can make a lemon pie or grandma used this to fill cream puffs.
