Ingredients

1 1/2 cup soft macaroon cookie crumbs

2 T melted butter

16 oz of cream cheese

1/2 cup sugar

1/2 tsp zest and 1 T fresh lemon juice

1/2 t vanilla

2 eggs

Preparation

Preheat oven to 350 Mix crumbs and butter and press into an 8 in sq pan which you brushed with melted butter or sprayed with cooking spray. Best the remaining ingredients together adding the eggs last and one at a time till blended and pour over crust Bake 20-25 minutes until center is just set. Cool and refrigerate for 3 or more hours.
