Ingredients
TUNA
4 tuna loins portions 6-8oz each
1 Florida passion fruit
3 T Soy sauce
1 T parsley, chopped
DRESSING
1 shallot, peeled & sliced
2 thyme sprigs, picked
1 1/2 T Dijon mustard
2 T hone
3 T rice wine vinegar
2 c vegetable oil
SALAD
1 dragonfruit, peeled & diced in 1/4" chunks
4 portions of greens
1/1 c almonds, slivered
1 red onion, small julienne
Preparation
(Tuna) (1) Combine all ingredients in a bowl and marinate for 2 hours in cooler. (Dressing) (1) Combine all ingredients except oik in a food processor. After mixture is semi-smooth, slowly drizzle in oil. (2) Season w salt and pepper to taste and reserve in cooler. (Salad) (1) Combine all ingredients and toss with dressing. (Assembly) Grill tuna for about 1 minute on both sides. Slice and serve over dressed salad.
