Ingredients
3 passion fruit
1 bottle (750ml) Champagne, chilled
Preparation
Cut passion fruits in half crosswise. Divide seeds and any juice among 6 Champagne flutes. Top with Champagne, and serve immediately.
For a seedless alternative, place seeds and any juice into a fine-mesh strainer over a bowl. Extract as much juice as possible by pressing a rubber spatula against the seeds. Each fruit should yield about 2 teaspoons of juice. Place 1 tablespoon passion-fruit juice into each glass, and top with Champagne. Serve immediately.
