Ingredients
For cake:
1/4 cup butter
1 cup sugar
2 eggs, slightly beaten
1 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
1/2 cup milk
2 eggs whites, stiffly beaten
2 cups pitted plums; blue or green - but the blue are prettier
For crumbs:
1/2 cup brown sugar
2 tablespoons flour
1 tsp cinnamon
1/4 cup butter
For Glaze:
3/4 cup icing sugar
1 tablespoon cream or milk
1/2 tsp almond extract
Preparation
For Cake: Cream together the butter, sugar and egg yoks. Sift together the flour, baking powder and salt; add to the creamed mixture alternately with the milk. Fold in the beaten egg whites. Pour the battter into a greased 9 x 9 cake pan (I use a nice oval crockery as it makes for a better presentation), place the plums neatly on top (I cut them in half and place rounded side up). Sprinkle the crumb mixture over top. Bake in a 350 degree oven for about 45 minutes. While the cake is baking, blend the glaze. When the cake comes out of the ove, dribble the glaze generously over it. When it cools it will be shiny. Serve it war or cold, with or without ice cream.
