Ingredients
1 1/2 cup flat leaf parsley
1/2 cup toasted pine nuts
1Tbs capers in oil
3-4 sardine fillets
2Tbs lemon juice
1Tbs spicy mustard
pinch of salt and pepper
2 cloves of garlic
1/4cup parmesan cheese
1/3 cup olive oil
Preparation
toast pine nuts in dry pan, if not already toasted. put all ingredients except the oil into a food processor (small one works fine) blend while slowly adding oil in slow stream. Serve as desired. For a nutty flavor you can heat anchovies in a small pan with olive oil before blending 2-5 minutes.
