Ingredients

3 cups hot, cooked orzo pasta (drained well)

3 Tablespoons butter

1/2 cup whipping cream

1/3 cup grated Parmesan cheese

2 Tablespoons fresh lemon zest

1/3 cup crushed, shelled, dry-roasted & salted pistachios (plus more for garnish, if desired)

1/4 teaspoon salt

Preparation

  1. In a large bowl, mix hot orzo with butter and stir to melt, coating orzo. Add cream, grated Parmesan cheese, lemon zest, crushed pistachios, and salt. Stir well to incorporate all ingredients.
  2. Serve immediately. Top with extra crushed pistachios, if desired. Serve warm. Makes 4 servings.
