1/2 cup flour

1/4 tsp salt

1/2 tsp pepper

1/4 cup Parmesan, grated

1/4 cup dry bread crumbs

2 eggs, beaten

1/4 cup butter

1/4 cup olive oil

1 lb tilapia fillets

Prepare butter separately (see: http://www.epicurious.com/recipes/member/views/1259037) Use three bowls for dredging Combine flour, salt, and pepper in first bowl Combine Parmesan and breadcrumbs in second bowl Place beaten eggs in third bowl Heat butter and oil in large skillet In order, dredge fish in seasoned flour, then egg, then Parmesan and breadcrumb mix Sautee over medium heat for 2 min each side or until done Place on serving dish and immediately place garlic-tomato-basil butter on top of each fillet so that butter melts on top Delish!
