Ingredients
Tomato-Basil Butter
1 tablespoon olive oil
1 small can tomato paste
2 teaspoons garlic, minced
1/2 cup butter, softened
2 teaspoons lemon rind, grated
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup fresh basil, minced
Fish
1/2 cup flour
3/4 teaspoon salt
1/2 teaspoon pepper
3/4 cup dry bread crumbs
3/4 cup parmesan cheese
2 eggs
1/4 cup butter
1/4 cup olive oil
1 pound flounder fillets
Preparation
Heat the olive oil in a small skillet. Saute garlic for 2-3 minutes. Add tomatoe paste and continue cooking for a couple more minutes. Combine tomato sauce, and remaining ingredients in food processor and process until smooth.
Combine the flour, salt and pepper in a shallow bowl or pie tin. Mix the crumbs and Parmesan cheese in another bowl. Have eggs ready in a third shallow dish.
Heat the butter and oil in a large skillet
Dip the fish first in the seasoned flour, then the eggs, and finally in the bread crumbs and Parmesan cheese
Saute over medium heat for ?? minutes.
