Ingredients

2 c boiling water

2 c chopped potatoes

1/2 c sliced carrots

1/2 c sliced celery

1/4 c chopped onion

1 1/2 salt, 1/4 tsp pepper

1/4 c butter

1/4 flour

2 c milk

1 c Parmesan cheese

1 17 oz can creamed corn

Preparation

Add water to potatoes, carrots, celery and onions, and salt & pepper. Cover and simmer 10 min. Do NOT drain.

Make a white sauce with butter, flour, and milk. Mix into undrained soup.

Add cheese, corn and undrained vegetables. Heat through (do not boil). Garnish with parsley.
