Ingredients
3 lb chicken breast file
1/4 c olive oil
1/4 cup parmesan grated
1/4 tsp dry oregano
2 garlic cloves, finely chopped
salt, pepper
1 cup chicken broth
1/2 cup balsamic vinegar
2 Tbs cold butter
Preparation
200C Mix chicken with olive oil, cheese, oregano and garlic. Place it on a baking tray and season with salt and pepper. Bake about 45 min until the chicken is nicely browned on top.
In a small saucepan mix chicken broth and balsamic vinegar and boil about 10 min. (there should be left about 1/3 cup). Take off the heat and add butter 1Tbs at a time whisking to a nice smooth consistency.
