Ingredients
4 boneless, skinless chicken breast halves (1 lb.)
1/2 c. seasoned bread crumbs
1/4 c. Parmesan cheese
1/2 t. dried basil
1 egg
1 T. margarine
1 T. oil
Preparation
Flatten chicken to 1/4-inch thickness. In a bag, combine crumbs, Parmesan cheese, and basil. In another bowl, beat the egg. Dip chicken into egg, then coat with crumb mixture by shaking in bag. In a large skillet, brown chicken in butter and oil over medium heat for 3-5 minutes on each side or until juices run clear.
