Ingredients

1 lb. chicken breast

1/2 cup fresh grated parmesan cheese

1/2 cup flour

3 Tbs. butter

3 Tbs. olive oil

1/4 cup vermouth / dry white wine

fresh parsley

Preparation

pound chicken until evenly flat, dredge in parmesan then in flour. Brown in skillet with butter and oil turning once. Place chicken in baking dish, pour vermouth over and sprinkle any remaining cheese. Cover loosely with foil and bake in preheated 325 oven for 15 min. Garnish with parsley.
