Ingredients
I sort of took two recipes and combined them.
1 lb of chicken breasts ( I cut these into bite size pieces)
seasoned bread crumbs
4 oz spaghetti
2 eggs
parmesan cheese (shredded)
mozzarella
8 oz cottage cheese (non fat works great for this)
bottle marinara (we use Rao’s or Newmans own and it’s great)
seasonings: minced garlic, onion powder, salt, pepper
2 tbs olive oil
Preparation
Put oil in skillet on medium-high heat. Boil water for noodles. Preheat oven to 350.
Cut chicken into bite size pieces. Rinse. Put bread crumbs in a zip-loc and add chicken. Shake until coated. Cook chicken until cooked through and browned. Add noodles to boiling water. Set chicken aside on paper towels to absorb oil and strain noodles. Whisk two eggs in a bowl. Add half to drained noodles. Add one cup of parmesan cheese to noodles along with salt, pepper. Put noodles in greased pan and build up around sides and bottom. (like a crust) Mix cottage cheese, other half of egg, salt, pepper, garlic and 1 cup parmesan cheese. Spread over noodles. Spread chicken pieces over cottage cheese spread. Pour marinara over chicken and noodles. (you can mix marinara and chicken and then put on cottage cheese as well) Cook for 20 minutes. Remove from oven and sprinkle mozzarella cheese all over top and put back in for 15 minutes.
