Ingredients
3 tbsp olive oil
2 cups onion, minced
6 tbsp minced garlic
2 tbsp flour
1/2 cup chicken broth
1 10oz. pkg spinach leaves
1 pkg cream cheese, softened
1 cup Parmesan cheese
1/4 cup sour cream
1 tsp cayenne pepper
Preparation
Heat oil in heavy large pot over medium heat. Add onion and garlic and cook until tender. Add flour, stir and cook. Gradually whisk in broth and bring to boil, whisking constantly. Cook until thickened.
Remove from heat. Stir in spinach, cheeses, sour cream and cayenne. Season with salt and pepper.
Serve hot with toasted bread or crackers.
