Ingredients
8 oz coarsely grated parmesan
6 oz goat cheese
1/4 c heavy cream
1/2 ts thyme
2 1/2 ts parsley chopped fine
salt
Preparation
- Place mounded tbsp of chees on non-stick cookie sheet or silpat. Pat into 2 inch circle. Allow 1-2 inches between circles. Bake one sheet at t time 4-5 minutes unitl bubly and lightly golden. Cool 1 minute on cookie sheet. Remove with spatula and gently drape over inverted 1 3/4 inch muffin tin or press into the hollow of a clean egg carton.
Pipe filling into baskets and garnish with thyme
