Ingredients
2 tsp lemon juice
1/8 tsp ground red pepper [cayenne]
2 tbs Parmesan cheese
1/4 cup Mayo
4- 1 lb Salmon fillets, skin removed
10 (~1/2 cup) Ritz crackers, crushed
Preparation
Preheat oven to 400*
Mix mayo, cheese, and pepper until well blended, set aside.
Place salmon on foil-lined shallow baking pan. drizzle evenly with lemon juice. Top with cheese mixture and spread evenly to cover salmon.
Sprinkle with cracker crumbs and back 12 to 15 minutes or until salmon flakes easily with fork
